The Guild
The guild is a typical “Adventurer-Guild”-like organization, but with a bit more variety.
Everyone can enter the guild for a small fee and receive a identification card that will help in entering any town, therefore most travelers or any person that does not live in a town is registered at the guild.
The main reason why there is the guild is for the missions one can accept there.
The missions are divided into type of mission and difficulty of the mission.
Any person with a guild card is allowed to accept any missions of the lowest difficulty (F), and when one has done 10 of the one type, one is allowed to take on missions of a higher difficulty (E) of the same type.
Because of that most people specialize on one type of missions and will therefore be called like that.
When one reaches a high enough level in one type, the minimum level of other types will rise a bit too, as it would make no sense for a high-proficient escort to slaughter small-fry animals directly next to the town. (which would be the most common F-rank hunter mission)

Additional to these are crafters guild for all crafting professions, and the dark guild, both of them subsidiary guilds following the main guild.
The dark guild is the known “bad” side of the guild and lets you accept illegal missions like assassinations, kidnapping, theft and such. It has no ranking system and everyone can accept these missions, but because most of these are very dangerous, only the best and most ruthless ones will carry out these well-paid missions.
Anyone that offers his fighting talents outside of the guild has most likely commited a crime the guild cannot overlook, and therefore are most likely cheaper and much more unreliable. No sane person would get help from these outlaws.
